Chef Scott Kapitan fine tuned his culinary skills at various Toronto restaurants—from Sassafrazz and the Rivoli to Herbs Restaurant and Crush Wine Bar—before deciding to open a restaurant in the County. According to Scott, a desire to have a closer connection to organic product was a major influence in the decision, "...there is a developing food community here that is very exciting.
